519,926. Treating grain. HUZENLAUB, E. G., and ROGERS, J. H. July 7, 1938, Nos. 20164/38 and 8445/39. [Classes 5 (ii) and 58] Wheat, rice or other grain is steeped, warm or hot, in water or an aqueous solution of a food substance and/or of a colouring matter, hydraulic pressure or the pressure of air or of an inert gas is applied to force the water or solution into the grain, and the grain is then removed from the liquid and dried. An aqueous extract may be prepared from bran by covering it with water and heating to about 80‹ C. with continuous stirring, a lower temperature, 60-65‹ C., being employed if the diastatic power of the extract is to be preserved. The extraction of the bran may be effected in the vessel in which the pressure treatment is to be effected, the treatment being carried out without removing the bran from the water. The extract is separated by filtration from the residue which may be dried and used as a cattle food &c. The treatment may be effected at from warm temperatures up to temperatures approaching the boiling point of water. a relatively high temperature of 60-80‹ C. being employed with whole rice and other cereal grains to be milled to produce unbroken grains, and a lower temperature, e.g. 20-40‹ C., and a high working pressure, e.g. 100 lbs. per sq. in., to give greater penetration, with wheat and other grains to be milled to flour. Whole rice may also be subjected to steam treatment to cleanse and sterilize it and control its colour. The steeping water may be used several times. The air may be withdrawn from the grain by producing a partial vacuum in the steeping vessel prior to the steeping. Rice may be treated with a solution of crystalline sugar or other soluble crystallizable food substance which increases its opacity, the rice being milled before or after the steeping to remove the germ and outer layers.
