Abstract
Oppfinnelsen vedrører en fremgangsmåte for å tilveiebringe en vegetabilsk proteinandel spesielt for fremstilling av vegetabilsk iskrem, hvor vegetabilske deler blir tilsatt vann eller et vandig løsemiddel for å oppløse og/eller dispergere vegetabilske proteiner fra de vegetabilske delene, og hvor en eller flere vegetabilske proteinandeler blir separert fra den vandige blandingen som er fremskaffet på denne måten, ved hjelp av en separeringsmetode. I henhold til denne fremgangsmåten blir en eller flere substanser som har lipofile eller amfifile grenseflater tilsatt blandingen for å separere en eller flere vegetabilske protein-andeler, til hvilke oppløste og/eller dispergerte proteiner som har lipofile eller amfifile egenskaper i blandingen, fester seg. Substansene som omfatter de vedheftede proteinene blir separert fra blandingen.
