Abstract

Die vorliegende Erfindung betrifft ein Verfahren zur Gewinnung einer pflanzlichen Proteinfraktion, insbesondere zur Herstellung von pflanzlichem Speiseeis, bei dem Pflanzenteile mit Wasser oder einem wasserhaltigen Lösungsmittel versetzt werden, um pflanzliche Proteine aus den Pflanzenteilen zu lösen und/oder dispergieren, und bei dem eine oder mehrere pflanzliche Proteinfraktionen aus der auf diese Weise erhaltenen wasserhaltigen Mischung mit einem Trennverfahren abgetrennt werden. Bei dem Verfahren werden zur Abtrennung der einen oder mehreren pflanzlichen Proteinfraktionen eine oder mehrere Substanzen mit lipophilen oder amphiphilen Grenzflächen in die Mischung eingebracht, an denen sich in der Mischung gelöste und/oder dispergierte Proteine mit lipophilen oder amphiphilen Gruppen anlagern. Die Substanzen mit den angelagerten Proteinen werden dann von der Mischung abgetrennt. Mit dem Verfahren wird eine pflanzliche Proteinfraktion mit besonders guten Emulgier-Eigenschaften erhalten, die sich vorteilhaft als Emulgator bei der Herstellung von pflanzlichem Speiseeis einsetzen lässt.
