Abstract
La invencion se refiere al uso de una carboximetilcelulosa (CMC) en productos de carne procesada, como liverwurst (salchichas de higado), wienerwurst(salchicha de Viena), bratwurst (salchicha asada), hamburguesas y jamones, en donde la CMC se caracteriza porque forma un gel a 25? C despues de la disolucion con alto esfuerzo cortante en una solucion acuosa de cloruro de sodio al 0.3% en peso, el contenido final de la CMC en la solucion acuosa de cloruro de sodio es de 1% en peso para una CMC que tiene un grado de polimerizacion (DP) de ?4,000, de 1.5% de peso para una CMC que tiene un DP de ?3,000-4,000, y de 2% en peso para una CMC que tiene un DP de 1,500-3,000, y de 4% en peso para una CMC que tiene un DP de?1,500, el gel es un fluido que tiene un modulo de almacenamiento (G??) que excede el modulo de perdida (G????) sobre toda la region de frecuencia de 0.01-10Hz cuando se mide en un reometro oscilatorio que funciona a una tension de 0.2; de preferencia, el producto de carne procesada comprende res, puerco o pollo; la CMC tambien se puede utilizar en combinacion con hidrocoloides tales como carragenina, proteina colagenosa, konjac o almidon.
