Abstract
La presente invencion se refiere a un nuevo metodo para elaborar un producto de frutas no liquido (trozos de fruta) que tiene un sabor de fruta natural y que se puede formar en configuraciones y tamanos individuales o discretos, deseados. Un metodo para elaborar un producto de trozo de frutas naturales, en forma de particulas, seco, que comprende: (a) adicionar un ingrediente de fruta y agua a una marmita calentada; (b) adicionar amortiguador, azucar y peptina al ingrediente de fruta y agua; (c) hervir la mezcla de amortiguador, azucar e ingrediente de fruta de peptina y agua para hidratar la peptina; (d) adicionar azucar liquida a la mezcla y continuar hirviendo la mezcla hasta que se evapore el exceso de agua; (e) adicionar azucar a la mezcla en la marmita para reducir la temperatura de la mezcla e incrementar la concentracion de solidos; (f) transportar la mezcla desde la marmita a traves de un intercambiador de calor para aumentar la temperatura de la mezcla; (g) adicionar acido y mezcla de sabor a la mezcla y mezclar el acido/sabor en la mezcla; (h) hacer pasar la mezcla en un deposito calentado y distribuir la mezcla sobre una superficie en la forma de trozos discretos de fruta; (i) retener los trozos de fruta en la superficie hasta que pierdan calor y formen un gel estable; (j) transportar los trozos de fruta en gel a traves de una zona para remover el acceso de humedad y mejorar la resistencia del gel de los trozos de fruta; y (k) transportar los trozos de fruta a traves de una zona de enfriamiento de modo que los trozos de fruta pierdan calor adicional y alcancen la temperatura ambiente.
