Abstract

Esta invencion se refiere a la creacion de la "Cerveza de agave", es decir, una bebida fermentada de Agave la cual se elabora a partir de la obtencion de azucares de las plantas conocidas genericamente como Agaves, y que sustituyen a los azucares que se generan normalmente del malteado de la cebada y/o otros granos gramitos para ser utilizados como base de la cerveza de malta tradicional. La bebida alcoholica resultante presenta caracteristicas organolepticas similares a la cerveza de malta tradicional con la principal diferencia de que dicha bebida se elabora a partir de una materia prima considerada un tallo modificado y no un grano. Para la elaboracion de este nuevo producto, se aplican las tecnicas conocidas en la industria tequilera en lo que se refiere a la obtencion de los azucares de Agave para generar un liquido azucarado que sea susceptible de fermentar, al cual posteriormente se le aplican las tecnicas conocidas en la industria cervecera para continuar con el proceso de elaboracion de la bebida, a partir de hervir el liquido e incorporarle de lupulo y /o otros saborizantes.
