Abstract
Se preparan productos de almidon físicamente modificado utilizando presion y calor, tal como sucedería al extruir material inicial de almidon que, opcionalmente, podría combinarse con gomas y/o surfactantes. Las propiedades de los productos pueden ser ajustadas variando el contenido de humedad de los materiales en el extruidor , así como la temperatura y la presion en una placa de molde provista en el extremo de salida del extruidor. Los elementos del tornillo en el extruidor son seleccionados con el objeto de utilizar suficientes elementos mezcladores en el extremo de salida, a fin de mantener la presion del tambor del extruidor tan alta como sea posible en una distancia corta. Los productos de almidon físicamente modificado están compuestos de partículas de almidon desde parcialmente cocinadas hasta plenamente cocinadas, y algunas partículas de almidon crudo. Son altamente dispersables en agua fría o caliente y muestran también viscosidad de hinchamiento tanto en frío como en caliente.
