Abstract

La presente invención se refiere a una composición acuosa en forma líquida, la cual contiene aceite, proteína de leche, monosacáridos, disacáridos, y/u oligosacáridos, uno más emulsificadores, y una combinación de fibras a base de celulosa insoluble en agua y uno o más hidrocoloides solubles en agua. La composición puede ser aireada, y puede ser usada para ser congelada quiescentemente para preparar una confitura congelada. La invención también proporciona un método para la preparación de la composición de la invención, y un método para congelar la composición aireada de la invención. La composición líquida puede ser distribuida temperaturas arriba de 0°C, y congelada en el punto de uso previo al consumido, de manera que se ahorra mucha energía comparado con la distribución de confituras congeladas temperaturas por debajo de 0°C.
