Abstract
Un producto alimenticio bajo en calorías, bajo en grasa de un producto alimenticio y una espuma estable. La espuma tiene una matriz líquida, burbujas de gas y un agente estructurante que forma un estructura de jaula lamelar o vesicular sin generar un gel que imparta textura cauchotosa. La estructura de jaula lamelar/vesicular atrapa una porción sustancial de las burbujas y matriz líquida en ella en una estructura suficientemente compacta que evita sustancialmente el drenado de la matriz líquida coalescencia y batido de las burbujas para mantener la estabilidad de la espuma aun cuando la espuma sea sometida a choque térmico. El producto alimenticio obtiene menos de 0.5 gramos de grasa, y proporciona una densidad calórica de menos de 200 kcal por cada porción de 100 ml de matriz líquida libre de burbujas de gas.
