Abstract

La presente invención se refiere a un producto de sal co-cristalizada, de bajo sodio, multicomponente, homogénea para uso en alimentos y productos farmacéuticos. El producto de sal de la invención esta esencialmente libre de segregación, tiene baja higroscopicidad y es de flujo libre. Tiene buenas propiedades de reducción microbiana y buen sabor. Proporciona la funcionalidad de la sal (NaC1) en alimentos procesados y también mantiene la seguridad microbiana, el valor nutricional y el sabor. El producto de sal de la invención incluye un componente de cloruro de metal alcalino y alcalinotérreo y un componente de cloruro de amonio. Un metal alcalino es potasio (K), y opcionalmente también sodio (Na). Un metal alcalinotérreo es Magnesio (Mg) o Magnesio (Mg) y Calcio (Ca) que tiene la suma de las relaciones molares 1. La invención proporciona también un proceso para producir los productos de sal de la invención.
