Abstract

La presente invención se refiere a un proceso para la producción de un concentrado de café líquido con un pH de 4.8 a 6 caracterizado porque comprende las etapas de a) someter el café molido, tostado a una o más etapas de extracción con agua resultando en un extracto de café, b) someter el extracto de café a separación, ya sea por fraccionamiento durante la(s) etapa (s) de extracción o por recuperación de aroma después de la tal etapa (s) de extracción resultando en un extracto de café aromático alto y un extracto de café aromático bajo, c) concentrar el extracto de café aromático bajo un contenido de materia seca de al menos 10% en peso, d) someter al menos 25% en peso de materia seca del concentrado de café aromático bajo a un tratamiento de calor de al menos 150°C a un tiempo de retención por a lo sumo 15 minutos, e) combinar al menos el concentrado de café aromático bajo con el extracto de café aromático alto, con ello después de la etapa b) se lleva a cabo una etapa de incremento de pH, de este modo obteniendo un concentrado de café líquido.
