Abstract

Se proporcionan métodos para modular el amargor y la astringencia del té verde, y productos nutritivos que tienen un té verde con amargor y astringencia reducidos. En una modalidad general, los métodos comprenden realizar la microfiltración del extracto de té verde para formar un retenido de microfiltración y un permeado de microfiltración; realizar al menos uno de ultrafiltración o fraccionamiento a baja temperatura del permeado de microfiltración; y usar el permeado de ultrafiltración de la ultrafiltración o el sobrenadante del fraccionamiento a baja temperatura para fabricar un producto de té verde. El permeado de ultrafiltración o el sobrenadante pueden concentrarse, pulverizarse o liofilizarse posteriormente para formar un polvo, usado como un concentrado, o diluirse para formar una bebida lista para el consumo. En una modalidad, la ultrafiltración se realiza en el permeado de microfiltración para formar un retenido de ultrafiltración y un permeado de ultrafiltración y, después, se realiza el fraccionamiento a baja temperatura en el permeado de ultrafiltración para formar un sobrenadante y un sedimento.
