Abstract

La presente invención se refiere a un proceso para preservar una materia prima de carbohidratos contra microorganismos, caracterizado porque comprende poner en contacto la materia prima de carbohidratos en una operación unitaria, en donde una operación unitaria es el almacenamiento o transporte con un dióxido de cloro estabilizado a un pH de al menos 2.6 antes de usar la materia prima de carbohidratos como una azúcar fermentable y en la ausencia de ácido agregado para generar dióxido de cloro, en donde la concentración del carbohidrato es al menos 1%, por peso, de la materia prima, y la cantidad de dióxido de cloro estabilizado agregado es de 10 a 10000 mg/kg como ClO2, con base en el peso total de la materia prima.
