Abstract
La invención se refiere a un proceso para la preparación de una composición de alulosa en producto que comprende las etapas de (a) proporcionar una composición de alulosa líquida que comprende alulosa disuelta en agua; (b) opcionalmente, calentar la composición de alulosa líquida a una temperatura elevada, preferentemente en condiciones de evaporación, reduciendo así el contenido de agua de la composición de alulosa; (c) administrar la composición de alulosa a una extrusora; (d) extruir la composición de alulosa en la extrusora; (e) obtener una composición de alulosa en producto de la extrusora; (f) opcionalmente, dejar solidificar la composición de alulosa en producto; y (g) opcionalmente, triturar y/o secar posteriormente la composición de alulosa en producto. La invención se refiere además a una composición de alulosa en producto que se puede preparar mediante el proceso según la invención y su uso.
