Una esencia del extracto de tien-cha, caracterizada porque se obtiene al someter un extracto de tien-cha a un tratamiento de carbono activado, y un método para producir un producto alimenticio fermentado utilizando la esencia del extracto de tien-cha proporciona una técnica que se puede reemplazar para una esencia de tien-cha obtenida al someter un extracto de tien-cha a una electrodiálisis con varios problemas, no tiene efecto en el sabor mientras mantiene los efectos del extracto de tien-cha de incrementar la capacidad de crecimiento de las bacterias de ácido láctico y la viabilidad o similar de las bacterias bifidobacterium, tiene un efecto sin precedente de incrementar la capacidad de crecimiento de las bacterias bifidobacterium, y facilita la producción y la formación en polvo.
