Abstract

El fin de la presente invención es proporcionar una tecnologí­a por la cual, en un método para fabricación de una composición edulcorante que contiene glucosa, fructosa y alulosa, dicho método comprenda tratar la glucosa con glucosa isomerasa y alulosa epimerasa, el contenido de la alulosa en la composición edulcorante se incrementa; una composición edulcorante que contiene glucosa, fructosa y alulosa y que tiene un alto contenido de alulosa se puede fabricar de manera continua a una alta eficiencia al inmovilizar la glucosa isomerasa y alulosa epimerasa, empacando las mismas en una columna para dar una relación de actividad de la glucosa isomerasa inmovilizada a la alulosa epimerasa inmovilizada de 1.49:1-5.61:1, y luego pasar una solución de glucosa a travós de la columna.
