Abstract

Las modalidades en este documento proveen un producto de palomita de maíz inflado y extruido sintetizado a partir de harina de maíz. El producto de palomita de maíz es similar en aspecto, textura y sabor al de una palomita de maíz regular. La harina de maíz se mezcla con agua para obtener una mezcla. La harina de maíz se cuece a temperatura y presión altas. La harina de maíz se hace pasar por los orificios del dado dispuestos en el extremo del extrusor por los dobles tornillos de extrusión de tipo martillo. El maíz es extruido por los orificios a una velocidad alta para obtener un producto de maíz de forma irregular. El producto de maíz es cortado en varias piezas de longitud deseada por una cortadora. Las piezas cortadas se secan con un secador antes de ser empacadas.
