Abstract
Un producto de proteína de soya que tiene un contenido proteínico de al menos el 60% en peso (N x 6.25) d.b., de preferencia un aislado de proteína de soya que tiene un contenido proteínico de al menos aproximadamente el 90% en peso (N x 6.25) d.b., se prepara a partir de un material fuente de proteína de soya mediante la extracción del material fuente de proteína de soya con una solución acuosa de sal de calcio, de preferencia una solución de cloruro de calcio, para provocar la solubilización de la proteína de soya proveniente de la fuente de proteína y para formar una solución acuosa de proteína de soya, separar la solución acuosa de proteína de soya de la fuente de proteína de soya residual, concentrar la solución acuosa de proteína de soya mientras que se mantenga la resistencia iónica prácticamente constante al utilizar una técnica selectiva de membranas, diafiltrar opcionalmente la solución concentrada de proteína de soya, y secar la solución de proteína de soya concentrada y opcionalmente diafiltrada.
