Abstract

La presente invención se refiere al flúor que está presente en el exoesqueleto de crustáceos, y especialmente krill que representa un problema para usar krill como una fuente para alimento, alimentación, aditivos de alimento y/o aditivos de alimentación. Se ha desarrollado un proceso para remover el flúor del material de krill sometiendo el krill a desintegración y a un proceso de hidrólisis enzimática antes de o simultáneamente con una remoción de las partículas de exoesqueleto produciendo un producto reducido en flúor. Inherente en el proceso descrito es la capacidad de procesar el material de krill con un alto contenido de lípido polar para producir productos bajos en flúor de calidad superior adecuados para alimento y alimentación así como también para la industria farmacéutica, nutracéutica y cosmética.
