Abstract

La presente invención se relaciona a un método para la manufactura de una composición que comprende proteínas y grasas, el método que proporciona una manera simple y no costosa de obtener productos proteináceos que contienen grasa de alto valor nutricional que son fáciles de manejar y al mismo tiempo poseen alta estabilidad hacia la coalescencia y oxidación. Más particularmente, se proporciona un método para la manufactura de una composición que comprende proteína y grasa en forma dispersa, el método que comprende las siguientes etapas: (i) proporcionar una suspensión que tiene un valor de pH más alto que 7.0, la suspensión que comprende agua, material proteináceo, grasa y opcionalmente álcali; (ii) incubar la suspensión de (i) a una temperatura en el intervalo de 50 - 150°C; (iii) homogenizar la suspensión de (ii) para formar una dispersión; y (iv), si es deseado, someter la dispersión de (iii) a un tratamiento subsecuente; en donde le material proteináceo en la etapa (i) comprende material proteináceo basado en vegetal, y/o material proteináceo basado en levadura; en donde la suspensión en la etapa (i) comprende por lo menos 5% de grasa en peso de la materia seca. La invención actual también se relaciona a las composiciones obtenidas por el método y a composiciones obtenidas por el método de la invención y, además, al uso de estas composiciones.
