Abstract
Η παρούσα εφεύρεση αφορά ένα φυτικό πρωτεϊνικό παρασκεύασμα, ιδιαιτέρως από πρωτεΐνες λούπινου, καθώς και μια μέθοδο για την παραγωγή του. Το πρωτεϊνικό παρασκεύασμα αποτελείται από ένα υδατικό μείγμα, το οποίο έχει περιεκτικότητα σε νερό > 75 % κατά βάρος και μάζα στερεάς ουσίας, η οποία περιέχει περισσότερο από 70 % κατά βάρος φυτικών πρωτεϊνών, και στο οποίο οι φυτικές πρωτεΐνες είναι μερικώς μετουσιωμένες. Το παρασκεύασμα έχει πολύ καλές τεχνο-λειτουργικές ιδιότητες, είναι εύκολα επεξεργάσιμο και έχει μεγάλη σταθερότητα έναντι της οξείδωσης των λιπών. Μπορεί να χρησιμοποιηθεί ως συστατικό για την παραγωγή τροφίμων και ως υποκατάστατο για εμπορικά φυτικά και ζωικά πρωτεϊνικά παρασκευάσματα.
