Abstract

Se proporciona una harina de germen de maíz desgrasada de grado alimenticio rica en nutrientes derivada de una fracción de germen de maíz molido en seco. La harina de germen de maíz desgrasada de grado alimenticio producida contiene altos niveles de proteína, fibra dietética y aminoácidos y es baja en grasa. Además, se proporciona un método para preparar harina de germen de maíz desgrasada de grado alimenticio, de alta calidad a partir de la fracción de germen de maíz molido en seco al formar collares y al remover el aceite de la fracción de germen de maíz molido en seco. El método incluye: proporcionar una fracción de germen de maíz molido en seco; acondicionar la fracción de germen de maíz molido en seco; formar en hojuelas la fracción de germen de maíz molido en seco para incrementar el área de superficie; adicionar agua y vapor a la fracción de germen de maíz formada en hojuelas; formar la fracción de germen de maíz formada en hojuelas, en collares; remover el aceite de los collares mediante la extracción con solvente usando un solvente de hidrocarburo; secar los collares sin aceite y procesar los collares sin aceite en un molino de harina de grado alimenticio para obtener harina de germen de maíz desgrasada de grado alimenticio con una consistencia deseada. El proceso de extracción con solvente produce una miscela, una mezcla de aceite de maíz, solvente de hidrocarburo y.agua. La miscela se puede procesar a través de un sistema de destilación para separar el aceite de maíz, el solvente de hidrocarburo y el agua con el fin de recuperar el aceite de maíz de grado alimenticio crudo.
