Abstract

Esta invención se refiere a un proceso de infusión en frío para fortificar granos de café con uno o varios aditivos funcionales de vitamina, no vitamina, mineral, no mineral, compuesto botánico, hormona, hierba, neutracéutico, lípido, carbohidrato, aminoácido, ácido, sal, prebiótico o probiótico. Esta invención divulga también un grano de café infusado producido a través del proceso de infusar el grano de café a una temperatura inferior a aproximadamente 49ºC (120ºF) con una solución que comprende agua, un iniciador de puente para sesgo de sal de ácido, agente(s) de fortificación, y un acido en una cantidad suficiente para alcanzar un pH de aproximadamente 3.65. Además, esta invención ofrece un método para la infusión de un grano de café con por lo menos un agente de fortificación aproximadamente a temperatura ambiente.
