Abstract

The invention relates to the wine industry, namely to a process for wine stabilization against crystalline turbidities.The process, according to the invention, provides for the cooling of wine, introduction of crystals of tartar cream, maintenance of cooled wine in the presence of crystals of tartar cream and their separation from the stabilized wine, at the same time into the wine are introduced crystals of tartar cream separated from lots of previously stabilized wine, which are crushed and treated, at least twice, with potassium metabisulphite or potassium metabisulphite and citric acid, in an aqueous suspension with the concentration of the crystals of tartar cream of 350…450 g/dm3, and treatment is carried out with potassium metabisulphite in a dose of 1.5…3.5 g/dm3 and citric acid in a dose of 3…5 g/dm3.
