Abstract
The invention relates to the wine industry, namely to a process for the production of sparkling wines.The process, according to the invention, provides for the preparation and treatment of the wine stocks, saturation with carbon dioxide of endogenous and exogenous origin, in two consecutive stages, with their simultaneous deoxygenation, optional storage and treatment in tanks under pressure, as well as air conditioning and isobaric bottling of finished wines. At the same time, the saturation with carbon dioxide is carried out in unidirectional open tanks under hydrostatic pressure of wine stocks therefrom to the saturation, Afterwards, through the lower part of the tank, the entire volume of wine stock or a part thereof is isobarically transfused into a hermetically sealed tank, wherein is carried out the saturation with carbon dioxide in the second stage, at an excess pressure to the achievement of a pressure corresponding to the category of wine, with its optional introduction into the unidirectional open tank of the wine stock to compensate the transfused quantity.
