The invention relates to biotechnology and can be used in the wine industry.The strainof Saccharomyces vini yeast, deposited in the National Collection of Nonpathogenic Microorganisms under the number CNMN-Y-26, can be used in the production of white dry wines.The result consists in the selection of a local yeast strain with the ability of carbohydrate fermentation at low temperatures to produce high-quality wine.
