Abstract

1295512 Effervescent alcoholic beverages SICALY, CAVE CO-OPERATIVE DES VIGNERONS DE SAUMUR M NEAU and J-M LAROUSSE 12 Feb 1970 [14 Feb 1969] 6908/70 Heading C6E Effervescent beverages are prepared by adding to a basic beverage (or to a sugar solution) a fruit juice extract obtained by drying up fruit juice or must to the solid state and optionally diluting the dried-up juice with an aqueous liquid, and allowing the mixture to ferment within tightly closed bottles or containers. Fermentation may, however be begun in a vat at atmospheric pressure. The extract may first be dispersed in a portion only of the basic beverage. Alternatively, the extract may be admixed before use with water to give a liquid having a S.G. between 1 and 1.1. Examples are directed to the fermentation of wine and re-hydrated dried grape must or raspberry juice and of beet sugar solution and dry extract of strawberry juice. The fruit juice extract may be obtained by freeze-drying a must diluted with water and containing such additives as bentonite, malto-dextrin, lees, glue and tannin. Many fruits are particularly mentioned.
