Abstract

The invention relates to the food industry, in particular to the wine industry and to the industry of non-alcoholic products, and in particular to a process for producing a natural non-alcoholic fermented sparkling white beverage.The process, according to the invention, consists, in the first stage, in producing dealcoholized wine by vacuum dealcoholation method or reverse osmosis. In the second stage - in preparing the fermenting mixture with the addition of grape must in an amount ensuring the alcohol content in the final product of at most 1.2% vol. and a pressure of endogenous carbon dioxide in the bottle of at least 300 kPa, and in the third stage it is carried out fermentation of the fermenting mixture, filtration, conditioning and isobaric bottling of the beverage.
