Abstract
Inventia se refera la industria alimentara, si anume la un procedeu de obtinere a produsului de desert pe baza de prune uscate. Procedeul include pregatirea prunelor uscate, umplerea lor cu umplutura, asezarea in recipient, turnarea siropului si inchiderea ermetica a recipientului. Se foloseste sirop cu o temperatura de 60…75°C si concentratia substantelor uscate solubile de 62…65%, obtinut cu utilizarea componentului lichid, componentului ce contine zaharuri, acidului organic si a conservantului. Activitatea apei in produsul finit fiind de 0,83…0,87. Rezultatul consta in imbunatatirea calitatii produsului finit, fructele isi pastreaza aspectul exterior si consistenta specifice pentru prunele uscate partial rehidratate, au o textura placuta.
