Abstract

Inventia se refera la industria laptelui, si anume la un procedeu de producere a bauturii lactate gazoase airan. Procedeul, conform inventiei, include prepararea unui amestec din lapte reconstituit si zer de branza cu aciditatea de 14...18oT, in raport de (90:10)...(40:60) respectiv, la care se adauga 1% mas. de zaharoza, incalzirea amestecului pana la temperatura de 60...65oC, omogenizarea, tratarea termica la temperatura de 75...80oC cu mentinere in decurs de 10...15 s, racirea pana la temperatura de acidifiere, introducerea maielei, acidifierea pana la aciditatea de 75...80oT, adaugarea la coagulul obtinut a adaosurilor gustative, amestecarea, refrigerarea, saturarea cu dioxid de carbon si imbutelierea produsului finit. Rezultatul consta in ameliorarea proprietatilor organoleptice si in simplificarea procesului de producere a bauturii.
