Abstract

Invenţia se referă la industria alimentară, în special la ramura conservării şi poate fi utilizată la conservarea castraveţilor.Procedeul solicitat include sortarea, spălarea şi blanşarea castraveţilor la temperatura de 90...95°C timp de 3...4 min şi răcirea lor. După aceasta se efectuează preambalarea castraveţilor şi a mirodeniilor, turnarea deasupra lor a unei soluţii de conservare care conţine apă, sare de bucătărie, acid acetic şi ascorbic, benzoat de sodiu, sorbat de potasiu şi alcool etilic alimentar de 40%. În calitate de mirodenii se utilizează mărar, rădăcini de hrean, usturoi, frunze şi rădăcini de ţelină şi de pătrunjel, frunze de mentă, de stejar, de vişin şi de dafin, cuişoare, coriandru, enibahar şi piper negru.Rezultatul invenţiei constă în majorarea valorii alimentare a castraveţilor, precum şi a termenului de păstrare a lor.
