Abstract

Inventia se refera la industria alimentaraŹ in special la ramura conservarii si poate fi utilizata la conservarea castravetilor. Procedeul solicitat include sortareaŹ spalarea si blansarea castravetilor la temperatura de 90...95(C timp de 3...4 min si racirea lor. Dupa aceasta se efectueaza preambalarea castravetilor si a mirodeniilorŹ turnarea deasupra lor a unei solutii de conservare care contine apaŹ sare de bucatarieŹ acid acetic si ascorbicŹ benzoat de sodiuŹ sorbat de potasiu si alcool etilic alimentar de 40%. In calitate de mirodenii se utilizeaza mararŹ radacini de hreanŹ usturoiŹ frunze si radacini de telina si de patrunjelŹ frunze de mentaŹ de stejarŹ de visin si de dafinŹ cuisoareŹ coriandruŹ enibahar si piper negru. Rezultatul inventiei consta in majorarea valorii alimentare a castravetilorŹ precum si a termenului de pastrare a lor. ŕ
