Abstract
Invenţia se referă la industria alimentară, şi anume la un procedeu de producere a cremei din năut.Procedeul de producere a cremei din năut include pregătirea năutului şi a cepei, înmuierea năutului în apă la temperatura de 50...60°C timp de 1,5...2,0 ore, blanşarea lui cu aburi la o presiune de 1,8 atm timp de 15...40 min şi răcirea în apă, tăierea şi prăjirea cepei, amestecarea năutului cu ceapa prăjită, adăugarea la acest amestec a prafului din frunze de busuioc şi rozmarin, a sării de bucătărie şi a zahărului, omogenizarea şi tratarea termică a amestecului la temperatura de 85...95°C, preambalarea, astuparea şi sterilizarea produsului obţinut.
