Abstract

Invenţia se referă la industria alimentară, în particular la industria produselor de cofetărie şi poate fi utilizată la prepararea napolitanelor.Compoziţia de preparare a foilor de napolitane, conform invenţiei, conţine ulei vegetal, lecitină, sare, bicarbonat de sodiu, făină de grâu de calitate superioară şi drojdie de panificaţie uscată în următorul raport al ingredientelor, în % mas.: ulei vegetal 47…48; lecitină 2,0…2,1; sare 1,1…1,2; bicarbonat de sodiu 1,1…1,2; drojdie de panificaţie 3,0…5,0; făină de grâu de calitate superioară restul. Procedeul de păstrare a foilor de napolitane include congelarea lor până la temperatura de -18…-22°C, ambalarea şi păstrarea la aceeaşi temperatură până la un an.Rezultatul invenţiei constă în mărirea termenului de păstrare a produsului finit şi ameliorarea calităţii napolitanelor.
