Abstract
Invenţia se referă la industria alimentară, şi anume la un procedeu de obţinere a semi-fabricatelor din carne tocată de ovină şi pasăre.Procedeul de obţinere a semifabricatelor din carne tocată include mărunţirea cărnii de ovină şi pasăre cu o maşină de tocat cu diametrul ochiurilor sitei de 2…3 mm, amestecarea cărnii într-un malaxor cu şrot de nuci, sare de uz alimentar, bicarbonat de sodiu, usturoi proaspăt, piper negru măcinat, ardei roşu măcinat, fibre alimentare de grâu, hidratate în apă în raport de 1:5 timp de 60 min la o temperatură a apei de 20…25°C, şi apă potabilă până la obţinerea unei mase omogene, modelarea semifabricatelor, ambalarea şi ermetizarea.
