Abstract

본 발명은 균일한 칼라 또는 무색의 맛과 향기를 지닌 풍미얼음의 제조방법을 제공하며, 그 제조방법은 덩어리 얼음 제조공정과, 상기 제조된 덩어리얼음을 조각얼음으로 분쇄하는 분쇄공정과, 상기 분쇄된 조각얼음을 소정 직격의 풍미조각얼음으로 선별하는 선별공정으로 이루어진다. 선별공정에서 조각얼음은 0℃ 이하의 건식냉각 유체를 상기 조각얼음상에 분무하면서 소정직격의 풍미조각얼음으로 선별된다. 그 결과 건색냉각유체는 조각얼음의 주변둘레에 분무되고 그에 따라 조각얼음의 표면온도는 저온으로 유지되고, 그 주변에 존재하는 워터성분은 블로우된다. 이런식으로 조각얼음 표면에서 물과 미세조각의 응집과 인접하는 조각얼음의 응집이 발생되지 않는다. 따라서, 풍미얼음의 맛과 조각얼음의 분리작업성이 증대된다. 또한, 본 발명은 잘 녹지 않고 응집하지 않는 소정범위의 조각크기를 가지며 증대된 맛을 지닌 풍미얼음을 제공한다.

Claims (6)

  1. 덩어리 얼음을 제조하는 단계와, 상기 제조된 덩어리 얼음을 조각얼음으로 분쇄하는 단계와, 상기 분쇄된 조각얼음을 소정직경의 조각얼음으로 선별하는 단계로 이루어진 균일한 칼라 또는 무색의 맛과 향기를 가진 풍미얼음의 제조방법에 있어서, 상기 조각얼음은 0℃ 이하의 건식 냉각유체를 상기 조각얼음상에 분무하면서 소정직경의 조각얼음으로 선별되는 것을 특징으로 하는 풍미얼음 제조방법.
  2. 제1항에 있어서, 상기 덩어리얼음은 0℃ 이하의 건식냉각 유체를 상기 덩어리얼음상에 분무하면서 상기 조각얼음으로 분쇄되는 것을 특징으로 하는 풍미얼음 제조방법.
  3. 제1항에 있어서, 상기 덩어리얼음은 균일하게 칼라화된 워터를 형성하도록 칼라색소를 물에 용해하고, -5℃ 내지 -30℃의 온도로 냉각되는 재빙용기의 벽상에 외부에서 상기 균일하게 칼라화된 워터를 분무하거나 방울로 떨어뜨리고, 제빙용기내에서 만들어진 얼음을 성장시킴으로써 제조되는 것을 특징으로 하는 풍미얼음 제조방법
  4. 제3항에 있어서, 상기 덩어리 얼음은 제빙용기내에서 만들어진 얼음을 성장하고, 상기 제빙용기의 벽의 상부로부터 상기 균일하게 칼라화된 워터를 점진적으로 붓고, 상기 제빙용기의 상기 벽의 바닥으로부터 동결되지 않은 칼라워터를 계속해서 퍼올리고, 상기 동결되지 않는 워터를 출발재로 칼라워터와 혼합하며, 얼음을 성장하기 위해 상기 제빙용기의 상기 벽의 상부에서 상기 혼합된 칼라워터를 재순환시켜 부음으로써 제조되는 것을 특징으로 하는 풍미얼음 제조방법.
  5. 제1항에서 기술된 상기 풍미얼음 제조방법에 의하여 제조된 풍미얼음.
  6. 제5항에 있어서, 상기 덩어리얼음에 합성감미료가 혼합되는 것을 특징으로 하는 풍미얼음.
