Abstract
본 발명은 식탁 소금 대용물인 라이신을 함유하는, 금속이 없는 소금 대용물 및 저 금속 소금 대용물에 관한 것으로, 라이신이 염화물 또는 숙신산보다 큰 몰 농도를 존재하는 라이신, 염소이온 및 숙신산을 함유하는 본 발명의 조성물은 식탁 소금 대용물 및 풍미 증진제로서 유용하다. 라이신, 염소이온 및 숙신산외에 나트륨 또는 칼륨을 함유하는 저 나트륨 및 저 칼륨 조성물이 또한 개시되어 있다

Claims (23)
- 하기 일반식의 염:상기식에서, n은 1 내지 16의 일반식 단위수이고; Y는 H, Na 또는 K이며 같거나 상이할 수 있고; X는 OH, 또는 Cl 또는 I 또는 F와 같은 할로겐이며, 모두는 아니지만, 저어도 하나의 X는 Cl이다.
- 제1항에 있어서, Y는 오직 H인 염.
- 제1항에 있어서, Y가 H및 Na로 부터 선택되고, 적어도 하나의 Y는 Na이며, 나트륨의 중량%는 0.25% 내지 9.1%인 나트륨이 낮은 염.
- 제1항에 있어서, Y가 H 또는 K이고, 칼륨의 중량%는 0.25% 내지 8.2%인 나트륨이 없는 염.
- 제1항에 있어서, n이 2이고, Y가 오직 H이며, 두개의 X가 OH이고, 나머지 두개의 X가 Cl인 염.
- 제1항에 있어서, n이 4이고, Y가 오직 H이며, 세개의 X가 OH이고, 5개의 X가 Cl인 염.
- 제1항에 있어서, n이 4이고, Y가 오직 H이며, 5개의 X가 OH이고, 세개의 X가 Cl인 염.
- 제1항에 있어서, 한 일반식 단위의 적어도 한 Y가 Na이고 나머지는 H인 염.
- 제1항에 있어서, 한 일반식 단위의 적어도 한 Y가 K이고 나머지는 H인 염.
- 제1항에 있어서, 1 내지 3몰의 수화 물분자가 있는 염.
- 제1항에 있어서, 한 일반식 단위의 적어도 한 X가 I인 염.
- 제1항의 염을 함유하는 식탁용 소금.
- 제1항의 염을 함유하는 식품 생성물.
- 제1항의 염을 함유하는 풍미 증진제.
- 염소이온 또는 숙신한 분자보다 라인신 분자를 더 많이 함유하는 라이신, 염소이온, 및 숙신산을 포함하는 조성물.
- 제15항에 있어서, 라이신, 염소이온 및 숙신산이 2:1:1의 몰비로 존재하는 조성물.
- 제15항에 있어서, 라이신, 염소이온 및 숙신낙이 8:3:4의 몰비로 존재하는 조성물.
- 제16항에 있어서 또한 Na 또는 K를 함유하는 조성물.
- 제17항에 있어서, 또는 Na 또는 K를 함유하는 조성물.
- 제15항의 조성물을 필수 성분으로서 함유하는 식탁용 소음 대용물 또는 풍미 증진제.
- 제15항에 있어서, 라이신이 L-라이신, D-라이신 및 DL-라이신으로 부터 선택되는 조성물.
- 제15항의 조성물을 함유하는 식품 생성물.
