Claims (1)

  1. 숙도가 80-85%의 매실을 채취하여 이를 세정한후 물기를 뺀매실에 있어서 매실을 -30℃~-40℃의 온도로 2-3시간 동안 급속냉동하여 이를 -2℃~-3℃의 온도 상태에서 콘테이너에 넣은 후 콘테이너를 적층하여 50kg의 무게로 2-3시간 눌러 15-20% 매실즙이 매실의 통기공을 통하여 추출되도록한 것을 특징으로 하는 매실엑기스의 제조방법.
