Abstract
본 발명에 따른 산수유 유산균 발효 조성물은 총 폴리페놀 함량 감소 및 총 플라보노이드 함량 감소를 보였으나 DPPH radical 소거활성 증가 효과를 보여 탁월한 황산화 효과가 있으며, 고지방식이로 산화적 스트레스로 유도된 비만 상태에서 부고환 지방의 감소 효과를 보여 탁월한 항비만 효과를 나타냄을 확인하였다.
Description
도 2는 산수유 유산발효에 따른 DPPH radical 소거 활성, 환원력 및 ABTS+ radical 소거 활성 변화를 나타낸 그래프이다.
도 3은 산수유 유산발효에 따른 SOD 유사 활성, hydrogen peroxide 소거 활성 및 β-carotene bleaching 측정 변화를 나타낸 그래프이다.

Claims (9)
- 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물의 제조 방법에 있어서,
상기 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물의 제조 방법은
(a) Lactobacillus plantarum을 배양하는 단계;
(b) 상기 배양한 Lactobacillus plantarum을 산수유 희석액에 접종하는 단계; 및
(c) 상기 접종한 산수유 희석액을 발효시켜 산수유 발효 조성물을 제조하는 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물의 제조 방법.
- 제 1항에 있어서,
상기 (b) 단계에서 산수유 희석액은 산수유 원액을 물에 희석하여 7.5 내지 20 %의 농도를 가지는 산수유 희석액인 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물의 제조 방법.
- 제 1항에 있어서,
상기 (b) 단계에서 접종은 산수유 희석액 100 중량부에 Lactobacillus plantarum을 1 내지 5 중량부로 접종하는 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물의 제조 방법.
- 제 1항에 있어서,
상기 (c) 단계에서 발효는 25 내지 40℃의 온도에서 12 내지 96시간 발효시키는 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물의 제조 방법.
- 제 1항 또는 제 2항에 있어서,
상기 산수유 희석액 100 중량부에 젖당(lactose) 1 내지 5 중량부를 첨가하고 pH를 6으로 조절한 후 Lactobacillus plantarum을 접종하는 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물의 제조 방법.
- 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물에 있어서,
상기 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물은 7.5 내지 20% 농도의 산수유 희석액 100 중량부에 젖당(lactose) 1 내지 5 중량부를 첨가하고 pH를 6으로 조절한 후 Lactobacillus plantarum 1 내지 5 중량부를 접종하고 25 내지 40℃의 온도에서 12 내지 96시간 발효시키는 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물.
- 제 6항에 있어서,
상기 산수유 유산균 발효 조성물의 총 산도는 0.1 내지 3%인 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물.
- 제 6항에 있어서,
상기 산수유 유산균 발효 조성물의 당도는 1 내지 20 Brix인 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물.
- 제 6항에 있어서,
상기 산수유 유산균 발효 조성물의 pH는 3 내지 7.5인 것을 특징으로 하는 항산화 및 항비만 효능을 갖는 산수유 유산균 발효 조성물.
