Abstract
본 발명에 따른 방법으로 제조된 오징어 젓갈은 식염 농도가 낮아서 성인병 유발 위험을 낮출 수 있고 방풍이 첨가되어 저장 및 유통 중 품질변화가 억제되므로 장기간 보관이 가능하며, 방풍의 유용성분뿐만 아니라 맛과 향이 젓갈에 첨가되어 품질과 풍미가 우수한 오징어 젓갈을 제공할 수 있다.

Claims (6)
- 오징어를 할복하여 껍질, 내장, 뼈 및 불가식부위를 제거하고 세척한 다음 절단하는 단계;
방풍의 잎과 줄기를 무즙에 침지한 다음 건조하고 분쇄하거나, 방풍의 잎과 줄기를 건조하고 분쇄한 다음 무즙에 침지하여 방풍 경엽분말을 얻는 단계;
상기 절단한 오징어 100 중량부에 소금 3~7 중량부, 상기 방풍 경엽분말 1~5 중량부 및 양념 10~100 중량부를 혼합하여 젓갈 혼합물을 제조하는 단계; 및
상기 젓갈 혼합물을 3~30 일간 숙성하여 오징어 젓갈을 제조하는 단계;를 포함하는, 방풍이 함유된 오징어 젓갈의 제조방법. - 청구항 1에 있어서,
상기 방풍의 잎과 줄기를 건조하기 전에 방풍의 잎과 줄기를 3~5 중량% 농도의 끓는 소금물에 10~30 초간 데치는 것을 특징으로 하는, 방풍이 함유된 오징어 젓갈의 제조방법. - 청구항 1에 있어서,
상기 방풍 경엽분말은 50~200 메시의 입도 크기를 가지는 것을 특징으로 하는, 방풍이 함유된 오징어 젓갈의 제조방법. - 삭제
- 청구항 1에 있어서,
상기 숙성은 0~5 ℃에서 저온숙성하는 것을 특징으로 하는, 방풍이 함유된 오징어 젓갈의 제조방법. - 청구항 1, 청구항 2, 청구항 3 또는 청구항 5 중 어느 한 항의 방법으로 제조되는, 방풍이 함유된 오징어 젓갈.
