Abstract
Description
項1. 大豆粉末及び/又は豆乳を含有する炭酸飲料であって、pHが5.7以上であることを特徴とする、炭酸飲料。
項2. 大豆由来の固形分含量が1〜30重量%である、項1に記載の炭酸飲料。
項3. 更に、糖類を含有する、項1に記載の炭酸飲料。
項4. 糖類は、ブドウ糖、ショ糖、果糖、果糖ブドウ糖液糖、水あめ、カラメル、難消化性デキストリン、ポリデキストロース、デキストリン、ソルビトール、イソマルツロース、及びマルチトールよりなる群から選択される少なくとも1種である、項3に記載の炭酸飲料。
項5. 糖類の配合割合が0.1〜30重量%である、項3に記載の炭酸飲料。
項6. 炭酸ガスをガスボリューム0.5〜3.5の割合で含む、項1に記載の炭酸飲料。
項7. 20℃における粘度が1000mPa・s以下である、項1に記載の炭酸飲料。
項8. ブリックスが4〜23である、項1に記載の炭酸飲料。
項9. 25℃で90日間保存しても大豆由来成分が凝固せずに外観性状が安定である、項1に記載の炭酸飲料。
項10. 大豆粉末及び/又は豆乳を含有する炭酸飲料の製造方法であって、
大豆粉末及び/又は豆乳を含有し、且つpHが5.7以上である炭酸飲料を得る工程と、
上記で得られた炭酸飲料を容器に充填する工程と
を含有する、炭酸飲料の製造方法。
以下の方法に従って、大豆粉末又は豆乳含有炭酸飲料を製造した。
大豆由来成分を含む調合液として、表1に示す組成のものを使用した。具体的には、調合液1−3は市販品の豆乳、調合液4−5は市販の大豆飲料(大豆粉末を含有する飲料)、調合液6は調合液5を水で2倍希釈したものである。また、各調合液に分散している粒子の粒度分布を測定した結果を図1−1及び図1−2に示す。なお、メジアン径及び粒度分布は、レーザー回析/散乱式粒度分布測定装置(堀場製作所製、LA-750)を用いて測定した。また、粘度については、B型粘度計(東機産業社製、TVB-10形)を用いて、ロータNo.19、回転速度6.0rpm、測定温度20℃の条件で測定した。
表2に示す処方の炭酸溶液を調製した。炭酸ガスの充填には、炭酸ガス混合機を使用した。炭酸溶液Iでは糖類及びアルカリ剤を所定量配合、炭酸溶液IIでは糖類を所定量配合、及び炭酸溶液IIIではアルカリ剤を所定量配合されている。なお、炭酸ガス量は、ガスボリューム測定装置(GVA-500B、京都電子工業株式会社製)を用いて測定した。
上記で得られた調合液と炭酸溶液を、それぞれ50gずつ混合して炭酸飲料を調製し、ガラス容器に収容して密閉した。
上記実施例1で得られた各炭酸飲料について、上記実施例1と同様の方法で、pH、炭酸ガス量、ブリックス、粘度、粒度分布、及びメジアン径を測定した。また、各炭酸飲料の製造直後の外観性状についても評価を行った。製造直後の炭酸飲料の外観性状については、下記判定基準に従って評価した。
<製造直後の炭酸飲料の外観性状の判定基準>
○:大豆由来成分の凝固が認められず、液状を示し、飲料として使用できる。
×:大豆由来成分の凝固が認められ、全体が豆腐状(ゲル状)に凝固していた。
上記で得られた炭酸飲料の安定性を評価するために、過酷条件(50℃)で所定期間保存を行い、外観性状を評価した。外観性状は以下の判定基準に従って評価した。

5:調製直後に比べて変化がない。
4:若干の沈殿が認められるが、容器を穏やかに反転させると沈殿が無くなる程度である。
3:若干の沈殿が認められ、容器を穏やかに反転させると、沈殿量が明らかに減少するものの、沈殿物が僅かに残る。
2:全体が豆腐状(ゲル状)に凝固又は離水した状態ではないが、明らかな沈殿が認められ、容器を反転させても、沈殿が減少せずに残存する。
1:全体が豆腐状(ゲル状)に凝固又は離水した状態である。
表8に示す組成の大豆粉末含有炭酸飲料(実施例4-1及び4-2)を調製し、実施例1と同じ判定基準で、製造直後の炭酸飲料の外観性状を評価した。次いで、これらの炭酸飲料を過酷条件(50℃)で4日間保存を行い、実施例3−1と同じ判定基準で保存後の外観性状を評価した。
上記で得られた炭酸飲料1-I〜6-Iを10人のパネラーに摂取させて、呈味及び風味を評価した。その結果、全てのパネラーによって、次のような評価結果が得られた。即ち、いずれの炭酸飲料でも、大豆に由来する良好な風味が十分に感じられ、更に口中で炭酸に起因する爽快感がある風味も感じられた。また、大豆粉末を含有する炭酸飲料4-I〜6-Iでは、豆乳を含有する炭酸飲料1-I〜3-Iに比べて、青臭みがなく、極めて良好な風味であった。
1.大豆粉末含有炭酸飲料の製造
表9に示す組成の大豆粉末含有炭酸飲料を製造した。なお、本大豆粉末含有炭酸飲料に配合した大豆粉末は、半割大豆を蒸煮処理した後に、乾燥及び粉砕処理に供することによって調製した。下記実施例5〜7の大豆粉末含有炭酸飲料は、いずれも製造直後に、凝固物の発生等は認められなかった。
上記で製造した大豆粉末含有炭酸飲料を4℃、25℃、37℃、及び50℃の暗所で1ヶ月間保存を行い、経時的に、物性値(炭酸ガス量、pH、ブリックス、粘度)及び呈味について評価を行った。なお、粘度については、B型粘度計(東機産業社製、TVB-10形)を用いて、ロータNo.19、回転速度6.0rpm、測定温度20℃の条件で測定した。更に、上記で製造した大豆粉末含有炭酸飲料を4℃、25℃、及び37℃の暗所で3ヶ月間保存を行い、呈味について評価を行った。

- 大豆粉末及び/又は豆乳を含有する炭酸飲料であって、pHが5.7以上であることを特徴とする、炭酸飲料。
- 大豆由来の固形分含量が1〜30重量%である、請求項1に記載の炭酸飲料。
- 更に、糖類を含有する、請求項1に記載の炭酸飲料。
- 糖類は、ブドウ糖、ショ糖、果糖、果糖ブドウ糖液糖、水あめ、カラメル、難消化性デキストリン、ポリデキストロース、デキストリン、ソルビトール、イソマルツロース、及びマルチトールよりなる群から選択される少なくとも1種である、請求項3に記載の炭酸飲料。
- 糖類の配合割合が0.1〜30重量%である、請求項3に記載の炭酸飲料。
- 炭酸ガスをガスボリューム0.5〜3.5の割合で含む、請求項1に記載の炭酸飲料。
- 20℃における粘度が1000mPa・s以下である、請求項1に記載の炭酸飲料。
