本発明の組成物には、大きく分けて、抗酸化剤と、代謝補助因子と、細胞成長促進因子とが含まれる。
300L配合量の調整法。水220Lにガラクトオリゴ糖12.3kgを溶解し、続けてペクチン1.1kgおよびゲル化剤3.6kg、脱脂粉乳1.6kg、ブドウ糖40.0kgを溶解した。攪拌しながら温度を80℃まで上昇させ、別に溶解したジンクイースト0.64kg、セレンイースト0.16kg、ビタミンミックス(β-カロテン22.9g、ビタミンC 1718.7g、ビタミンB1 9.7g、ビタミンB2 14.5g、ビタミンB6 16.9g、ビタミンB12 0.061g、ナイアシン49.1g、葉酸3.1g、ビタミンD 0.012g 、ビタミンE70.7g、パントテン酸42.2gの混合剤)4.05kg、ビタミンC0.26kg、アセスルファムカリウム0.066kg、乳酸カルシウム1.16kg、クエン酸鉄ナトリウム0.162kg、濃縮キャロット果汁10.9kgと混合した。さらに、乳酸菌飲料32.4kgおよび香料0.64kgを添加した後、容量70mLの容器に充填、ボイル殺菌、冷却した。組成物の物性値は、5℃において、ゲル強度7,000±2,000N/m2、付着エネルギー60±40J/m3、凝集性0.7±0.1J/m3であった。
1.目的
調製例1で調製した組成物を高齢者に投与することで、エネルギー効率が上昇しタンパク異化を抑制、血中タンパクの上昇、さらには発熱回数の抑制が可能であるか確認することを目的とした。
対象は65歳以上の入院患者とし、投与群と投与しない群(以下、非投与群)に分け、投与群には通常の昼食に上記組成物(70mL)を1個追加し、非投与群は通常の食事のみとした。投与期間は90日間とし、前,30,60,90日目に採血し、トランスサイレチン(TTR)、総リンパ球数(TLC)などを測定した。さらに期間中の発熱回数を確認した。
結果を図1〜12に示す。投与群31例(男9例,女22例),非投与群23例(男6例,女17例)、またBMIは投与群18.5、対照群19.7であり、両群に偏りはなかった。
今回の結果より、微量栄養素の投与が栄養状態を改善させ、その結果、免疫能が向上し、発熱回数の抑制に繋がることが示唆された。高齢者の栄養管理では、投与熱量・タンパク量に目を向けがちであるが、代謝に関わる、所要量に捉われない微量栄養素の投与が、タンパク異化を抑制し、蛋白・核酸合成を惹起することで血中タンパクの上昇、さらに生体機能維持に繋がるものと思われる。微量栄養素のプライオリティを高く設定することが高齢者の栄養管理には不可欠であると考えられた。
