Abstract

PURPOSE: To prepare a "konjak" (devil's-tongue jelly) having both the springiness of the "konjak" and the nutrient value of soybean curd and improved coefficient of digestibility and good shape retaining property, by coagulating a paste-like mixture of soybean milk with "konjak" flour with milk of lime.
CONSTITUTION: Water is added to a soybean milk prepared by the conventional method to adjust the concentration to about 2.6° and the water temperature to 18W20°C. A "konjak" flour (a devil's-tongue flour) is added to the hydroated soybean milk and stirred. Milk of lime is then added to the resultant paste-like mixture and introduced into a mold box, coagulated and molded.
