Abstract
PURPOSE: To prepare a granular soybean protein having a high hydration rate at low temperatures, a smooth and soft taste, and a high water absorption, by extruding a mixture of soybean protein powder and a natural paste kneaded with water.
CONSTITUTION: Soybean powder comprising defatted soybean, concentrated soybean protein powder, or their mixture, is incorporated with 0.2W4 wt.% of one or two or more types of natural pastes selected from guar gum, xanthan gum, carrageenan, locust bean gum, and pectin, and then with water, kneaded, and extruded through an extruder under pressure and heat.
