Abstract

PURPOSE: To remove bitter taste, lime odor, etc. from "konjak" (paste made from the starch of the devil's-tongue), and to obtain odorless and palatable "konjak" having improved taste and flavor, by treating "konjak" prepared by conventional process with an acidic solution.
CONSTITUTION: Powdered raw material of "konjak" prepared by conventional process is swollen with water, mixed with a coagulant such as lime water, and coagulated in a mold by heating. The "konjak" thus obtained is immersed in nearly the same amount of a 3W5% acidic solution of acetic acid, citric acid, etc. to neutralize the alkalinity of the "konjak" with the acid.
