Abstract

PURPOSE: To obtain high-purity citrus molasses and citric acid, by treating fruit juice dregs with an adjusted amount of calcium hydroxide.
CONSTITUTION: Fruit juice dregs of citrus fruits are blended with calcium hydroxide and pressed to give peel juice slightly acidic in a pH of 5.0W6.5. This juice is heated at ≥60°C, and the separating out insoluble deposit is separated and removed to give pure peel juice. This juice is optionally concentrated to give high-purity citrus molasses having low discolaration and odor development, and a small amount of calcium ion, while the separated insoluble deposit is adjusted to a pH of 1.4W1.5 with an acid such as sulfuric acid, and filtered to give a filtrate, to which calcium hydroxide at about 80°C is added, a deposit consisting essentially of calcium citrate is precipitated, separated and treated conventionally to give citric acid.
