Abstract

PURPOSE: To prepare a food having similar tissue as the heat-coagulated liver of anglerfish, by crushing the liver of livestock together with oils or fats and egg white, and heating and coagulating the resulted homogeneous fluid.
CONSTITUTION: 10pts.wt. of the fresh liver of livestock (e.g. pig cattle, chicken, etc.) is mixed with 7W15pts.wt. of oils or fats (e.g. salad oil, butter, margarine, shortening, etc.) and 7W15pts.wt. of egg white, and crushed to obtain a homogeneous fluid mixture. The mixture is poured into a container to about 2W3cm thick, and heated at 100W130°C for 10W30min.
