Abstract

PURPOSE: To obtain the titled food having a taste of its own, by blending cheese, water, edible oil, and vinegar in specific ratios respectively, followed by emulsification.
CONSTITUTION: Water is added to cream cheese, mixed cheese, processed cheese, etc. and stirred well by a mixer, and the prepared mixture is blended with sugar, salt, and flavoring. To this blend an edible oil, e.g., cotton seed oil, etc. is added little by little and the blend is emulsified by the cheese, the emulsion is stirred with vinegar and treated by a homogenizer, to give a food like mayonnaise. In the blending ratio, preferably the amount of cheese is 3W30wt%, water 5W 30wt%, edible oil 40W80wt%, and vinegar 2W30wt% respectively.
