Abstract

PURPOSE: To provide whipped vegetable cream havng high nutrient value and topping characteristics, without using an emulsifier or a particular whipping machine, by using a foamable vegetable protein as a raw mterial.
CONSTITUTION: A vegetable protein having excellent foamability, (e.g. coagulated soybean protein obtained by the instantaneous high-temperature treatment of an aqueous slurry containing heat-denaturated or alcohol-denaturated defatted soybean), is mixed with sugar, an emulsifier, an emulsion stabilizer, and a colorant to a homogeneous mixture. The mixture is dissolved in a proper amount of hot water to obtain a viscous liquid, which is whipped and mixed with an edible oil or fat and a flavoring agent.
