Abstract
PURPOSE: To activate gluten in wheat flour, to increase the visco-elasticity of gluten, and consequently, to reinforce the network structure of pastry, by mixing wheat flour with liquefied fish meat proteins extracted from the enzymatic decomposition product of fish meat.
CONSTITUTION: In the preparation of a pastry mixture by adding water, salt and other additives to wheat flour, 0.1W2wt%, based on the wheat flour, of liquefied fish meat proteins obtained by extracting the enzymatic decomposition product of fish caught in large quantities, e.g. saurel, mackerel, sardine, etc. are added to the flour, and the mixture is subjected to mechanical stress.
